A flammekuechen is a traditional dish from the Elzas region. It is composed of bread dough rolled out very thinly in the shape of a rectangle (traditionally) or circle, which is covered with fromage blanc or crème fraîche, thinly sliced onions and bacon. It is one of the most famous specialties of the region. Depending on the region this dish is named: flammekueche (Elzas), flammkuchen (Germany) or tarte flambée (France). There are many variaties to the original recipe. Until the introduction of the pizza in the 60’s the flammekueche was a typical farmers recipe used to test the heat of the wood oven. From there the name flamm (flame) kueche.
